MG: summer lunch

pan-roasting eggplant, tomato, green beans; frying egg


  1. Yum. Egg and vegetables, one of my favourites! (My favourite breakfast ever is fried aubergine slices, roast tomatoes, sautéed mushrooms and scrambled egg on toast). Yours looks like less washing up though. I have never quite got the hang of pan-roasting. How long would you cook the veggies before adding the egg? x
